How to Store Leftover Egg Yolks

Egg yolks tend to dry out, so store them in the smallest container that you can to minimize the amount of air they're exposed to. Egg yolks will keep in the refrigerator for up to two days.

You can also freeze egg yolks! Egg yolks tend to thicken and get gelatinous when you freeze them. To prevent that from happening, whisk the yolks with a pinch of salt (⅛ teaspoon per 4 yolks) before freezing. Make sure to label your container with the number of yolks since you'll no longer be able to tell! The amount of salt is negligible, but you may want to add a little less salt to your bake if you go this route. The yolks will keep in the freezer for up to a year!
