With the help of sugar-free sweeteners, these little pecan treats are actually super healthy for you and SERIOUSLY addicting! Easy, 5 Minute, Keto Glazed Pecan Recipe (Sugar-Free) (1)

I originally made these delicious 5 minute keto glazed pecans to go atop a keto salad with pears, goat cheese, and a maple balsamic vinaigrette for our annual Friendsgiving Dinner last week! I happened to make too big of a batch of these glazed pecans, which ended up being a blessing and a curse all at once. It was a blessing because the leftover pecans had turned out SOOOO dang good that our whole family was addictively munching on the extras the rest of the weekend; but, it was also a curse, because they were SO GOOD that we couldn’t STOP eating them. The entire additional batch was gone within about 24 hours ????‍♀️!

I have made actually quite a few versions of candied nuts before. All of them fantastically crunchy and extra sweet, thanks to one of two natural sugar-free sweeteners used to replace regular sugar. The only thing was, all my previous versions actually used TOO much sugar-free-sweetener (because “candied“????‍♀️) . Thus, they didn’t fool anyone into thinking they were the real thing, because the amount of sugar-free sweeteners was TOO much.

See, the best sweeteners to use for any sort of sugar-free sweets that you want to actually get CRUNCHY is typically erythritol or monkfruit sweetener. But the issue with using these in a recipe that has a high ratio of sugar-free sweetener to other ingredients, is that you tend to get this very odd “cooling” effect in your mouth from the sweeteners (specifically from a higher volume of it). The effect is actually completely normal, but can certainly be off-putting for someone who isn’t used to sugar-free alternatives!

When I created this version of these 5 minute Keto Glazed Pecans it was meant to go in a salad, where I wanted them lightly sweetened but still crunchy and of course still full of flavor. I didn’t want full on ‘candied’ pecans because it would have been overpowering and it definitely wouldn’t have fooled my carb-indulging friends that would be enjoying this Friendsgiving meal with us! And what I got by reducing the amount of sweetener in this recipe (and increasing the vanilla extract!), was something WONDERFUL and unexpected. The ‘glazed’ (as opposed to full on ‘candied) pecans actually ended up having MORE than enough sweetness to be utterly addictive and delicious, but little enough that you can BARELY even tell there is a cooling effect from any sugar-free sweeteners involved!! Meaning – the sugar-free sweeteners are almost completely undetectable! And what’s even better, is that I actually MUCH prefer the lighter crunch and texture to these ‘glazed’ pecans that that of the harder shelled, crunchier iteration of ‘candied’ pecans!!!! Ding, Ding, Ding ????????????????.

So, this stand alone recipe was BORN and sharing was DEFINITELY REQUIRED . Not just because I am sharing that AMAZING Keto glazed pecan salad with goat cheese, pear, and maple balsamic vinaigrette on the blog as well , but because this is a killer, stand alone GLAZED pecan recipe!!! And it’s SO easy to make (in under 5 minutes!!). that I will be having a little snacking bowl of these sitting on my dining room table throughout the holiday months (because sweet, glazed nuts should ALWAYS be handy during thanksgiving/christmas time!!!!!!)!

If you’re interested in trying these the keto salad recipe that I mentioned already (which fooled ALL my carb-loving friends!) that uses these glazed pecans then try THIS Keto Glazed Pecan Salad With Goat Cheese, Pears, and Maple Balsamic Vinaigrette RECIPE of mine. I promise you, you will NOT be disappointed with it!!!! Here’s some photos of the salad 🙂

Now, specific to this 5 Minute Keto Glazed Pecan RECIPE. It’s got a SUPER simple and short ingredient list…and I HIGHLY RECOMMEND that you do NOT make substitutions for the two specialty ingredients on the list. Technically, you’re only REQUIRED to use one of the specialty ingredients, but using BOTH is going to yield a truly magical Keto glazed pecan recipe, that includes both vanilla AND HINTS OF MAPLE. If you can avoid skipping the sugar-free maple syrup in it, then definitely keep it in the recipe. However, the recipe is still absolutely delish even without it 😉

The two brands that I am recommending to NOT substitute in this recipe, are the Lakanto GOLDEN monkfruit sweetener, and the Sugar-Free Choc-Zero Maple Syrup (this is the optional, but recommended one). Thankfully, both can be found via AMAZON, and shipped to your doorstep within 2 days????. You can either click on the pictures above or click on the links in the recipe if you don’t already have these ingredients handy!

Since this recipe is super simple, I don’t have a long list of tips here like I usually do on most recipes????. The ONLY tip that I have for you is to follow the instructions carefully and to NOT BURN THE PECANS!!!!!! Pecans that are toasted on the stovetop tend to toast QUICKLY, and then once they ARE toasted, then tend BURN even quicker after that. Once your house smells like toasted pecans, THEY’RE DONE and you can move on to adding your glazing ingredients. The glazing ingredients need to be over heat for ONLY 15 seconds!!! You might think that’s not enough time to crisp these up properly, but any more time than that and you’ll burn these little treats (and yes, I know from experience because I have BURNT MINE BEFORE!). And let me tell you….. burnt pecans DO NOT taste anything like TOASTED pecans ????????????????. Ick! So, just keep a careful eye on them, and be ready to take these off heat quickly if they start overbrowning!

Description

All you need to make these super easy keto glazed pecan recipe is a skillet, a stove top, and literally ONLY 5 minutes of time! These sugar-free glazed pecans are deliciously sweetened, and lightly crunchy with hints of vanilla, maple, and toasted nuts that you will be completely addicted to! It’s okay though, there’s no sugar in these, so they’re all HEALTHY!!!

Ingredients

Scale

3 TablespoonsLakanto Golden

1 Tablespoon Hot Water

1/4 teaspoon Vanilla Extract

1/4 teaspoon Salt

1/2 teaspoonChoc-Zero Maple Syrup(OPTIONAL)

2 Cups Pecan Halves

Instructions

1.) Mix all ingredients together, exceptthe pecans, in a small bowl. Whisk together until combined. Set aside.

2.) Place the Pecan halves in a large skillet, over medium/high heat, stirring/flipping them around every 15 seconds or so for 2-3 minutes, or until you start to SMELL toasted pecans (careful not to let any of them get BURNT/blackened though!). As soon as pecans are toasted (remember, you’ll smell toasted pecans!), add in your sweetener/water mixture into the pan and stir to coat each pecan. Cook for ONLY 15 SECONDS! Remove from heat immediately, and dump glazed pecans onto parchment paper to cool (they look wet but will crisp up like candy quickly after this). Spread the pecans out as much, separating each one so that they don’t all stick together as they cool. Let pecans cool ideally for 1-2 hours (they should be crisp enough though within 20 minutes if you’re in a rush!).

3.) Store cooled, glazed pecans in an airtight container at room temperature. 🙂
